Nutritional Knowledge and Skills Learned
The course has taught me about the various diets available and their health benefits. I was unaware of these diets and I particularly like the Mediterranean diet because of its simplicity and health benefits. Additionally, the course has taught me to plan and prepare meals that will ensure that I obtain the nutrients for healthy growth and development. For instance, the Mediterranean diet requires the replacement of butter and margarine with olive oil which is healthier than the former because of its monosaturated fats.
The Areas I Could Have Learned More
I would have learned more about the advantages and disadvantages of processed/refined foods and unprocessed foods. This knowledge would prevent the unnecessary debates over the myths and misconceptions that treat processed foods as unhealthier than unprocessed ones. Similarly, I could understand how to mix the two to improve diet quality.
